- 2 cups fresh spinach (or frozen, thawed and drained)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup milk or cream
- 1/2 cup grated cheese (such as feta, mozzarella, or cheddar), divided
Instructions
- Preheat your oven to 375°F (190°C).
- In an oven-safe skillet, heat olive oil over medium heat and sauté chopped onion until translucent.
- Add minced garlic and cook for 1 more minute.
- Add the spinach and cook until wilted (if using fresh) or heated through (if using frozen).
- In a bowl, whisk together the eggs, milk or cream, salt, pepper, and half the grated cheese.
- Pour the egg mixture over the spinach mixture in the skillet, gently stirring to distribute evenly.
- Cook on the stovetop for 2-3 minutes until the edges start to set.
- Sprinkle the remaining cheese on top.
- Transfer the skillet to the oven and bake for 10-15 minutes, or until the frittata is set in the center and lightly golden on top.
- Let it rest for a few minutes before slicing and serving.
