Description

This Spinach Frittata combines fluffy eggs, tender spinach, and melty cheese into a hearty, low-carb, and protein-rich dish perfect for any meal of the day.


Ingredients

  • 6 large eggs
  • 2 cups fresh spinach (or frozen, thawed and drained)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup milk or cream
  • 1/2 cup grated cheese (such as feta, mozzarella, or cheddar), divided

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium heat and sauté chopped onion until translucent.
  3. Add minced garlic and cook for 1 more minute.
  4. Add the spinach and cook until wilted (if using fresh) or heated through (if using frozen).
  5. In a bowl, whisk together the eggs, milk or cream, salt, pepper, and half the grated cheese.
  6. Pour the egg mixture over the spinach mixture in the skillet, gently stirring to distribute evenly.
  7. Cook on the stovetop for 2-3 minutes until the edges start to set.
  8. Sprinkle the remaining cheese on top.
  9. Transfer the skillet to the oven and bake for 10-15 minutes, or until the frittata is set in the center and lightly golden on top.
  10. Let it rest for a few minutes before slicing and serving.
