Description

These Spinach and Feta Quesadillas are a quick, healthy, and delicious meal option, perfect for a light lunch or dinner. They combine fresh spinach, creamy feta, and melty cheese in a crispy tortilla.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped onion (optional)
  • 1 clove garlic, minced
  • 1/2 tsp olive oil
  • 4 medium whole wheat tortillas
  • Salt and pepper to taste
  • Cooking spray or additional olive oil for pan

Instructions

  1. Heat olive oil in a pan over medium heat. Add garlic and onion (if using), sauté for 2-3 minutes until fragrant.
  2. Add chopped spinach and cook for another 2-3 minutes until wilted. Season with salt and pepper. Remove from heat.
  3. In a bowl, combine the cooked spinach mixture, feta cheese, and mozzarella cheese.
  4. Place a tortilla on a flat surface and spread half of the filling on one side. Fold the tortilla in half. Repeat with remaining tortillas and filling.
  5. Heat a non-stick pan or skillet over medium heat and lightly grease with cooking spray or a little olive oil.
  6. Cook the quesadillas for 2-3 minutes on each side, until golden brown and the cheese is melted.
  7. Remove from pan, let cool slightly, then cut into wedges and serve warm.

Notes

  • Use frozen spinach (thawed and drained) if fresh is not available.
  • Add cooked chicken or mushrooms for extra protein.
  • Great served with salsa or Greek yogurt on the side.
