Description
A refreshing and tangy twist on the classic margarita, this Sparkling Rhubarb Margarita combines homemade rhubarb syrup with tequila and lime, topped with sparkling water for a fizzy finish.

- 1 cup chopped rhubarb
- 1/2 cup sugar
- 1/2 cup water
- 2 oz tequila
- 1 oz rhubarb syrup
- 1 oz lime juice (freshly squeezed)
- 1/2 oz triple sec or orange liqueur
- 2 oz sparkling water
- Ice
- Salt or sugar for rimming glass (optional)
- Lime wedge and rhubarb stalk for garnish (optional)
Instructions
- In a small saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil, then simmer for 10 minutes until rhubarb is soft.
- Strain the syrup through a fine mesh sieve, pressing the solids to extract liquid. Let cool.
- If desired, rim a glass with salt or sugar by running a lime wedge around the edge and dipping it in your chosen rimming ingredient.
- Fill a cocktail shaker with ice. Add tequila, rhubarb syrup, lime juice, and triple sec. Shake well.
- Strain into the prepared glass filled with ice.
- Top with sparkling water and stir gently.
- Garnish with a lime wedge and a piece of rhubarb if desired. Serve immediately.
Notes
- You can make the rhubarb syrup ahead and store in the refrigerator for up to a week.
- Adjust the sweetness by adding more or less sugar to the syrup.
- For a mocktail version, omit tequila and triple sec, and add extra sparkling water or tonic.
