Description

A refreshing and tangy twist on the classic margarita, this Sparkling Rhubarb Margarita combines homemade rhubarb syrup with tequila and lime, topped with sparkling water for a fizzy finish.


Ingredients

  • 1 cup chopped rhubarb
  • 1/2 cup sugar
  • 1/2 cup water
  • 2 oz tequila
  • 1 oz rhubarb syrup
  • 1 oz lime juice (freshly squeezed)
  • 1/2 oz triple sec or orange liqueur
  • 2 oz sparkling water
  • Ice
  • Salt or sugar for rimming glass (optional)
  • Lime wedge and rhubarb stalk for garnish (optional)

Instructions

  1. In a small saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil, then simmer for 10 minutes until rhubarb is soft.
  2. Strain the syrup through a fine mesh sieve, pressing the solids to extract liquid. Let cool.
  3. If desired, rim a glass with salt or sugar by running a lime wedge around the edge and dipping it in your chosen rimming ingredient.
  4. Fill a cocktail shaker with ice. Add tequila, rhubarb syrup, lime juice, and triple sec. Shake well.
  5. Strain into the prepared glass filled with ice.
  6. Top with sparkling water and stir gently.
  7. Garnish with a lime wedge and a piece of rhubarb if desired. Serve immediately.

Notes

  • You can make the rhubarb syrup ahead and store in the refrigerator for up to a week.
  • Adjust the sweetness by adding more or less sugar to the syrup.
  • For a mocktail version, omit tequila and triple sec, and add extra sparkling water or tonic.
