A refreshing twist on the classic margarita, this sparkling rhubarb version features a homemade rhubarb syrup, fresh lime juice, tequila, and a splash of sparkling water – the perfect cocktail for spring and summer.

- 1 cup chopped fresh rhubarb
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 oz tequila
- 1 oz fresh lime juice
- 1 oz rhubarb syrup (from above)
- 1/2 oz orange liqueur (like triple sec or Cointreau)
- 2 oz sparkling water or club soda
- Ice cubes
- Salt or sugar for rimming glass (optional)
- Lime wedge and rhubarb ribbon for garnish (optional)
Instructions
- To make rhubarb syrup: In a small saucepan, combine rhubarb, water, and sugar. Bring to a boil, then simmer for 10 minutes. Strain and let cool.
- Optional: Rim a glass with lime and dip in salt or sugar. Set aside.
- In a cocktail shaker, combine tequila, lime juice, rhubarb syrup, and orange liqueur with ice. Shake well.
- Strain into an ice-filled glass.
- Top with sparkling water and stir gently.
- Garnish with a lime wedge or rhubarb ribbon and serve immediately.
Notes
- Make rhubarb syrup ahead of time and store in the fridge for up to 1 week.
- Use pink rhubarb for a vibrant cocktail hue.
- Adjust sweetness by increasing or decreasing rhubarb syrup to taste.
