Description

Spanish Rice is a flavorful side dish made with rice, tomatoes, onions, and spices. It’s the perfect accompaniment to Mexican and Tex-Mex meals, offering a savory and slightly tangy taste.


Ingredients

  • 1 tbsp olive oil
  • 1 cup long grain white rice
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 3/4 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add rice and cook, stirring frequently, until lightly golden, about 5 minutes.
  3. Add chopped onion and cook for another 2–3 minutes until softened.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and tomato sauce, then add cumin, chili powder, salt, and pepper.
  6. Bring mixture to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes or until rice is tender and liquid is absorbed.
  7. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and garnish with cilantro if desired.

Notes

  • Use vegetable broth to make it vegetarian.
  • For extra flavor, sauté a diced jalapeño with the onion.
  • This rice pairs well with tacos, enchiladas, and grilled meats.
