Chicken Filling:
- 2 cups cooked chicken breast, shredded
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup canned corn, drained
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/4 cup salsa
- 2 tablespoons mayonnaise or sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Wraps:
- 4 large flour tortillas
- Lettuce leaves for layering (optional)
Instructions
- Prepare the Chicken Filling: In a large mixing bowl, combine shredded chicken, black beans, corn, bell pepper, red onion, cheese, salsa, mayonnaise or sour cream, chili powder, cumin, garlic powder, salt, and pepper. Stir until evenly mixed.
- Assemble the Wraps: Warm tortillas slightly to make them pliable. Lay each tortilla flat and place a lettuce leaf in the center if using. Spoon 1/4 of the chicken mixture onto each tortilla. Fold the sides in, then roll up tightly into a wrap.
- Serve: Slice in half and serve immediately, or wrap tightly in foil or parchment for a make-ahead lunch.

- You can swap in rotisserie chicken for convenience.
