- 3/4 cup warm water

Instructions
- In a large bowl, mix flour, baking powder, and salt.
- Cut in the shortening or butter until the mixture resembles coarse crumbs.
- Gradually add warm water and mix until a dough forms.
- Knead on a floured surface for 3–5 minutes until smooth. Cover and let rest for 20 minutes.
- Roll out the dough to about 1/4-inch thickness and cut into 3-inch squares or triangles.
- Heat oil in a deep skillet to 375°F (190°C).
- Fry sopapillas a few at a time, turning once, until golden and puffed—about 1 minute per side.
- Drain on paper towels.
- Serve warm, dusted with powdered sugar or drizzled with honey.
Notes
- Ensure the oil is hot enough to puff up the sopapillas; test with a small piece of dough first.
- You can keep fried sopapillas warm in a low oven while frying the rest.
- For a sweet twist, fill them with whipped cream or serve with ice cream.
