- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons shortening or butter
- 3/4 cup warm water
- Vegetable oil, for frying

Instructions
- In a large bowl, whisk together flour, baking powder, and salt.
- Cut in shortening or butter until the mixture resembles coarse crumbs.
- Gradually add warm water, mixing until a soft dough forms. Knead on a lightly floured surface for about 5 minutes until smooth.
- Cover and let rest for 20 minutes.
- Roll the dough out to about 1/4 inch thickness and cut into 3-inch squares or triangles.
- Heat about 2 inches of vegetable oil in a deep skillet or pot to 375°F (190°C).
- Fry a few pieces at a time, turning once, until golden and puffed, about 1–2 minutes per side.
- Drain on paper towels. Serve warm with honey or powdered sugar if desired.

- Ensure oil is hot enough so sopaipillas puff properly.
- Can be served sweet or savory depending on the toppings or fillings.
