Description

Soft Rice Krispie Bars are a no-bake, gooey treat made with melted marshmallows and butter, resulting in a tender and chewy twist on the classic favorite.


Ingredients

  • 6 tablespoons unsalted butter
  • 16 ounces mini marshmallows
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 cups Rice Krispies cereal

Instructions

  1. Grease a 9×13-inch baking pan with butter or non-stick spray.
  2. In a large saucepan over medium heat, melt the butter.
  3. Add mini marshmallows, stirring constantly until completely melted and smooth.
  4. Remove from heat and stir in vanilla extract and a pinch of salt.
  5. Quickly fold in the Rice Krispies cereal, mixing gently until fully coated with the marshmallow mixture.
  6. Transfer the mixture to the prepared pan and press it in evenly using a buttered spatula or wax paper. Don’t press too hard to keep the bars soft.
  7. Let the bars set at room temperature for about 30 minutes.
  8. Cut into squares and serve.

Notes

  • Add sprinkles, chocolate chips, or swirl in peanut butter for variations.
  • Store in an airtight container at room temperature for up to 3 days, or refrigerate up to 1 week.
  • To soften chilled bars, microwave for 5-8 seconds.
  • Use cookie cutters for fun shapes once set.
