Soft Rice Krispie Bars are a no-bake, gooey treat made with melted marshmallows and butter, resulting in a tender and chewy twist on the classic favorite.

- 6 tablespoons unsalted butter
- 16 ounces mini marshmallows
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 6 cups Rice Krispies cereal
Instructions
- Grease a 9×13-inch baking pan with butter or non-stick spray.
- In a large saucepan over medium heat, melt the butter.
- Add mini marshmallows, stirring constantly until completely melted and smooth.
- Remove from heat and stir in vanilla extract and a pinch of salt.
- Quickly fold in the Rice Krispies cereal, mixing gently until fully coated with the marshmallow mixture.
- Transfer the mixture to the prepared pan and press it in evenly using a buttered spatula or wax paper. Don’t press too hard to keep the bars soft.
- Let the bars set at room temperature for about 30 minutes.
- Cut into squares and serve.
Notes
- Add sprinkles, chocolate chips, or swirl in peanut butter for variations.
- Store in an airtight container at room temperature for up to 3 days, or refrigerate up to 1 week.
- To soften chilled bars, microwave for 5-8 seconds.
- Use cookie cutters for fun shapes once set.
