Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus more for rolling)
  • 1 tsp vanilla extract
  • 3/4 cup chopped pecans or walnuts
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and 1/2 cup powdered sugar together until light and fluffy.
  3. Mix in vanilla extract.
  4. Gradually add flour and salt, mixing until just combined.
  5. Fold in chopped nuts.
  6. Roll dough into 1-inch balls and place on prepared baking sheet.
  7. Bake for 12-15 minutes until bottoms are lightly golden and tops remain pale.
  8. Cool for 5 minutes, then roll cookies in powdered sugar while still warm.
  9. Cool completely and roll in powdered sugar again before serving.
