Description

A hearty and flavorful soup made with smoked sausage, kale, and sweet potatoes—perfect for a warming, nutritious meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 12 oz smoked sausage, sliced
  • 2 medium sweet potatoes, peeled and diced
  • 6 cups chicken broth
  • 4 cups chopped kale
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook for 3–4 minutes until translucent.
  3. Stir in minced garlic and cook for 1 minute more.
  4. Add the sliced smoked sausage and cook until lightly browned, about 4–5 minutes.
  5. Add diced sweet potatoes, chicken broth, smoked paprika, and thyme. Stir to combine.
  6. Bring to a boil, then reduce heat and simmer for 15–20 minutes until sweet potatoes are tender.
  7. Add chopped kale and cook for another 5–7 minutes until wilted and tender.
  8. Season with salt and pepper to taste. Serve hot.

Notes

  • Use turkey sausage for a lighter version.
  • Substitute spinach if kale is unavailable.
  • This soup freezes well for up to 3 months.
