- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 12 oz smoked sausage, sliced
- 2 medium sweet potatoes, peeled and diced
- 6 cups chicken broth
- 4 cups chopped kale
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook for 3–4 minutes until translucent.
- Stir in minced garlic and cook for 1 minute more.
- Add the sliced smoked sausage and cook until lightly browned, about 4–5 minutes.
- Add diced sweet potatoes, chicken broth, smoked paprika, and thyme. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes until sweet potatoes are tender.
- Add chopped kale and cook for another 5–7 minutes until wilted and tender.
- Season with salt and pepper to taste. Serve hot.
Notes
- Use turkey sausage for a lighter version.
- Substitute spinach if kale is unavailable.
- This soup freezes well for up to 3 months.
