- 1 lb smoked sausage, sliced
- 1.5 lbs baby potatoes, quartered
- 1 tbsp olive oil
- 1 bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside.
- Add potatoes to the same skillet and cook for 10-12 minutes, stirring occasionally, until golden and fork tender.
- Add onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
- Return sausage to the skillet and stir in smoked paprika, salt, and pepper.
- Cook for another 2-3 minutes until everything is heated through.
- Garnish with chopped parsley before serving, if desired.
Notes
- Cut potatoes into even sizes for uniform cooking.
- You can use any type of smoked sausage or kielbasa.
- Add red pepper flakes for a spicy kick.
