Description

A quick and hearty one-pan meal featuring smoked sausage, tender potatoes, and sautéed vegetables, perfect for a 30-minute dinner.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1.5 lbs baby potatoes, quartered
  • 1 tbsp olive oil
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced smoked sausage and cook until browned, about 4-5 minutes. Remove and set aside.
  3. Add potatoes to the same skillet and cook for 10-12 minutes, stirring occasionally, until golden and fork tender.
  4. Add onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
  5. Return sausage to the skillet and stir in smoked paprika, salt, and pepper.
  6. Cook for another 2-3 minutes until everything is heated through.
  7. Garnish with chopped parsley before serving, if desired.

Notes

  • Cut potatoes into even sizes for uniform cooking.
  • You can use any type of smoked sausage or kielbasa.
  • Add red pepper flakes for a spicy kick.
