- 4 cups cherry tomatoes
- 3 tbsp extra virgin olive oil, plus more for drizzling
- 4 garlic cloves, thinly sliced
- 4 sprigs fresh thyme or rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 balls burrata cheese
- Balsamic glaze (optional)
- Fresh basil, torn (for garnish)
- Crusty bread or crostini (for serving)
Instructions
- Preheat oven to 275°F (135°C).
- Line a baking sheet with parchment paper and spread cherry tomatoes evenly.
- Drizzle with olive oil, scatter garlic slices and fresh herbs on top.
- Season with salt and pepper.
- Roast for 2 to 2.5 hours until tomatoes are wrinkled and slightly caramelized.
- Let tomatoes cool slightly after removing from the oven.
- Arrange burrata on a serving plate and spoon roasted tomatoes over and around it.
- Drizzle with additional olive oil and balsamic glaze, if using.
- Garnish with torn basil leaves.
- Serve with crusty bread or crostini.
