Description

A simple yet elegant dish featuring sweet, jammy cherry tomatoes and creamy burrata, perfect as an appetizer or light meal.


Ingredients

Scale
  • 4 cups cherry tomatoes
  • 3 tbsp extra virgin olive oil, plus more for drizzling
  • 4 garlic cloves, thinly sliced
  • 4 sprigs fresh thyme or rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 balls burrata cheese
  • Balsamic glaze (optional)
  • Fresh basil, torn (for garnish)
  • Crusty bread or crostini (for serving)

Instructions

  1. Preheat oven to 275°F (135°C).
  2. Line a baking sheet with parchment paper and spread cherry tomatoes evenly.
  3. Drizzle with olive oil, scatter garlic slices and fresh herbs on top.
  4. Season with salt and pepper.
  5. Roast for 2 to 2.5 hours until tomatoes are wrinkled and slightly caramelized.
  6. Let tomatoes cool slightly after removing from the oven.
  7. Arrange burrata on a serving plate and spoon roasted tomatoes over and around it.
  8. Drizzle with additional olive oil and balsamic glaze, if using.
  9. Garnish with torn basil leaves.
  10. Serve with crusty bread or crostini.

  • Add red pepper flakes for gentle heat.
  • Use heirloom cherry tomatoes for color.
  • Swap burrata with mozzarella or ricotta.
