Tender chicken slow-cooked in a sweet and savory honey garlic sauce, served over noodles for an easy and comforting meal.

- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1/2 cup low-sodium soy sauce
- 1/3 cup honey
- 1/4 cup ketchup
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 4 garlic cloves, minced
- 1 tsp grated fresh ginger
- 1/4 tsp crushed red pepper flakes (optional)
- 8 oz noodles (spaghetti, ramen, or lo mein)
- 1 tbsp cornstarch + 2 tbsp water (slurry)
- 2 green onions, sliced (for garnish)
- 1 tsp sesame seeds (for garnish)
Instructions
- Place the chicken in the bottom of a slow cooker.
- In a bowl, whisk together soy sauce, honey, ketchup, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes.
- Pour the sauce over the chicken, cover, and cook on low for 6 hours or high for 3-4 hours.
- Once cooked, remove chicken and shred with two forks.
- Stir cornstarch slurry into the sauce in the slow cooker. Turn to high and cook for 10-15 minutes until thickened.
- Meanwhile, cook the noodles according to package instructions, then drain.
- Return shredded chicken to the thickened sauce and mix well.
- Serve chicken and sauce over noodles, garnished with green onions and sesame seeds.
Notes
- Chicken thighs yield more flavor and tenderness, but breasts work too.
- Adjust sweetness or saltiness by tweaking honey or soy sauce amounts.
- Leftovers reheat well and can be stored in the fridge for up to 3 days.
