Description

Tender chicken slow-cooked in a sweet and savory honey garlic sauce, served over noodles for an easy and comforting meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup honey
  • 1/4 cup ketchup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 4 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1/4 tsp crushed red pepper flakes (optional)
  • 8 oz noodles (spaghetti, ramen, or lo mein)
  • 1 tbsp cornstarch + 2 tbsp water (slurry)
  • 2 green onions, sliced (for garnish)
  • 1 tsp sesame seeds (for garnish)

Instructions

  1. Place the chicken in the bottom of a slow cooker.
  2. In a bowl, whisk together soy sauce, honey, ketchup, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes.
  3. Pour the sauce over the chicken, cover, and cook on low for 6 hours or high for 3-4 hours.
  4. Once cooked, remove chicken and shred with two forks.
  5. Stir cornstarch slurry into the sauce in the slow cooker. Turn to high and cook for 10-15 minutes until thickened.
  6. Meanwhile, cook the noodles according to package instructions, then drain.
  7. Return shredded chicken to the thickened sauce and mix well.
  8. Serve chicken and sauce over noodles, garnished with green onions and sesame seeds.

Notes

  • Chicken thighs yield more flavor and tenderness, but breasts work too.
  • Adjust sweetness or saltiness by tweaking honey or soy sauce amounts.
  • Leftovers reheat well and can be stored in the fridge for up to 3 days.
