Description
These slow cooker chicken fajitas are an easy and flavorful meal made with tender chicken, bell peppers, and onions, all cooked to perfection in a crockpot.

- 1.5 lbs boneless, skinless chicken breasts
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 1 can (14.5 oz) diced tomatoes, drained
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Juice of 1 lime
- 8 small flour or corn tortillas
- Optional toppings: sour cream, shredded cheese, guacamole, cilantro
Instructions
- Place the sliced bell peppers and onion at the bottom of the slow cooker.
- Place the chicken breasts on top of the vegetables.
- Sprinkle the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper over the chicken.
- Pour the drained diced tomatoes over the top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken, shred it with two forks, and return it to the slow cooker. Stir to combine with the vegetables and juices.
- Add lime juice and mix well.
- Serve the chicken and vegetable mixture in warm tortillas with your choice of toppings.
Notes
- You can use chicken thighs for extra juiciness.
- Great for meal prep — store in airtight containers for up to 4 days.
- Make it spicier by adding jalapeños or hot sauce.
