Description

A rich and creamy butter chicken made in the slow cooker, with tender chicken simmered in a flavorful, spiced tomato sauce. Perfect for a comforting meal.


Ingredients

  • 2 lbs boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon ground turmeric
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon garam masala
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup unsalted butter, cubed
  • 1 tablespoon tomato paste
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon lemon juice (optional)
  • Cooked rice, for serving


Instructions

  1. Place the chicken, onion, garlic, ginger, and all spices (turmeric, cumin, coriander, garam masala, cinnamon, cayenne) into the slow cooker.
  2. Add the diced tomatoes, tomato paste, and a pinch of salt and pepper. Stir to combine.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is cooked through and tender.
  4. Once the chicken is cooked, stir in the butter and heavy cream. Continue cooking for another 15-20 minutes on low, until the sauce is creamy and thickened.
  5. Adjust seasoning with salt, pepper, and lemon juice to taste.
  6. Garnish with fresh cilantro and serve with cooked rice.

Notes

  • For extra richness, you can add a splash of half-and-half or full-fat coconut milk instead of some of the cream.
  • To make it spicier, add more cayenne pepper or some diced green chilies to the slow cooker.
  • If you prefer using chicken breasts, they will also work but may require slightly less cooking time.
  • Serve with naan bread or a side of sautéed vegetables for a complete meal.
