Description
A rich and creamy butter chicken made in the slow cooker, with tender chicken simmered in a flavorful, spiced tomato sauce. Perfect for a comforting meal.
Ingredients
- 2 lbs boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon ground turmeric
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon garam masala
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1/2 cup unsalted butter, cubed
- 1 tablespoon tomato paste
- 1/4 cup fresh cilantro, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon lemon juice (optional)
- Cooked rice, for serving
Instructions
- Place the chicken, onion, garlic, ginger, and all spices (turmeric, cumin, coriander, garam masala, cinnamon, cayenne) into the slow cooker.
- Add the diced tomatoes, tomato paste, and a pinch of salt and pepper. Stir to combine.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is cooked through and tender.
- Once the chicken is cooked, stir in the butter and heavy cream. Continue cooking for another 15-20 minutes on low, until the sauce is creamy and thickened.
- Adjust seasoning with salt, pepper, and lemon juice to taste.
- Garnish with fresh cilantro and serve with cooked rice.
Notes
- For extra richness, you can add a splash of half-and-half or full-fat coconut milk instead of some of the cream.
- To make it spicier, add more cayenne pepper or some diced green chilies to the slow cooker.
- If you prefer using chicken breasts, they will also work but may require slightly less cooking time.
- Serve with naan bread or a side of sautéed vegetables for a complete meal.
