Ingredients
-
2 pounds pork tenderloin
-
1 1/2 cups BBQ sauce (your favorite kind)
-
1 small onion, thinly sliced
-
3 cloves garlic, minced
-
1 tablespoon brown sugar
-
1 tablespoon apple cider vinegar
-
1 teaspoon smoked paprika
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
1/4 teaspoon chili powder (optional for heat)
Instructions
-
Place the sliced onions and minced garlic in the bottom of your slow cooker.
-
In a small bowl, mix together the BBQ sauce, brown sugar, apple cider vinegar, smoked paprika, salt, pepper, and chili powder (if using).
-
Place the pork tenderloin on top of the onions, then pour the BBQ sauce mixture over the pork.
-
Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours, until the pork is tender and easy to shred.
-
Once done, remove the pork and shred it with two forks. Return the shredded pork to the slow cooker and stir to coat with the sauce.
-
Let it warm for another 10–15 minutes, then serve hot on buns, over rice, or however you like.
