Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 medium zucchini, sliced
- 8 oz mushrooms, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add sliced zucchini and mushrooms to the skillet.
- Season with salt, black pepper, and red pepper flakes if using.
- Cook for 8–10 minutes, stirring occasionally, until vegetables are tender and lightly browned.
- Remove from heat and garnish with fresh parsley if desired.
- Serve warm as a side dish or over rice or pasta.

- Use a mix of mushroom types for deeper flavor.
- Don’t overcrowd the pan to avoid steaming the vegetables.
