Avocado:

  • 2 ripe avocados (halved and pitted)

Shrimp Mixture:

  • 1/2 pound cooked shrimp (peeled, deveined, and chopped)
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • Optional diced jalapeño for heat

Instructions

  1. In a medium bowl, combine chopped shrimp, mayonnaise, lime juice, garlic powder, paprika, salt, pepper, red onion, and cilantro. Mix well until fully combined.
  2. Taste and adjust seasoning as needed.
  3. Scoop out a small portion of the avocado flesh to create more room for filling, and gently dice and mix it into the shrimp mixture if desired.
