- 8 oz linguine or spaghetti
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 lb large shrimp, peeled and deveined
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine or chicken broth
- 1 tablespoon lemon juice (plus zest if desired)
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook pasta in salted water according to package directions. Drain and set aside, reserving 1/2 cup pasta water.
- In a large skillet, heat olive oil and 2 tablespoons butter over medium heat.
- Add garlic and red pepper flakes, sautéing for 1 minute until fragrant.
- Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until pink and opaque. Remove shrimp and set aside.
- Pour in wine (or broth) and lemon juice, scraping up any bits from the pan. Simmer for 2–3 minutes.
- Stir in remaining 2 tablespoons butter and add the cooked pasta, tossing to coat. Add reserved pasta water if needed to loosen the sauce.
- Return shrimp to the pan and toss everything together. Cook for another minute until heated through.
- Remove from heat, sprinkle with fresh parsley and Parmesan if using. Serve immediately.
Notes
- Use fresh lemon juice for the best flavor.
- Don’t overcook shrimp — they cook quickly and become rubbery if overdone.
- Gluten-free pasta can be used as a substitute.
- Add cherry tomatoes or spinach for extra color and nutrition.
