Description

Shrimp Scampi Pasta is a quick and elegant dish made with tender shrimp sautéed in a garlic-butter sauce, tossed with pasta and fresh lemon for a bright, savory flavor.


Ingredients

  • 8 oz linguine or spaghetti
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 lb large shrimp, peeled and deveined
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • 1 tablespoon lemon juice (plus zest if desired)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook pasta in salted water according to package directions. Drain and set aside, reserving 1/2 cup pasta water.
  2. In a large skillet, heat olive oil and 2 tablespoons butter over medium heat.
  3. Add garlic and red pepper flakes, sautéing for 1 minute until fragrant.
  4. Add shrimp, season with salt and pepper, and cook 1–2 minutes per side until pink and opaque. Remove shrimp and set aside.
  5. Pour in wine (or broth) and lemon juice, scraping up any bits from the pan. Simmer for 2–3 minutes.
  6. Stir in remaining 2 tablespoons butter and add the cooked pasta, tossing to coat. Add reserved pasta water if needed to loosen the sauce.
  7. Return shrimp to the pan and toss everything together. Cook for another minute until heated through.
  8. Remove from heat, sprinkle with fresh parsley and Parmesan if using. Serve immediately.

Notes

  • Use fresh lemon juice for the best flavor.
  • Don’t overcook shrimp — they cook quickly and become rubbery if overdone.
  • Gluten-free pasta can be used as a substitute.
  • Add cherry tomatoes or spinach for extra color and nutrition.
