Description

Shrimp Avocado Tostadas are a light and refreshing Mexican-inspired dish featuring seasoned shrimp, creamy avocado, and crisp tostada shells, perfect for a quick lunch or dinner.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 tbsp lime juice
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1 medium tomato, diced
  • 46 tostada shells
  • Optional toppings: sour cream, hot sauce, shredded lettuce

Instructions

  1. In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  2. Heat a skillet over medium heat and cook shrimp for 2-3 minutes per side or until opaque and cooked through. Set aside.
  3. In another bowl, mash avocados with lime juice, salt, and chopped cilantro to taste.
  4. Add red onion and diced tomato to the avocado mixture and mix well.
  5. Spread the avocado mixture over each tostada shell.
  6. Top with cooked shrimp and any additional desired toppings.
  7. Serve immediately for best texture.

Notes

  • Use precooked shrimp to save time.
  • Make the avocado mixture just before serving to prevent browning.
  • Warm the tostada shells slightly in the oven for extra crunch.
