Ingredients

Units Scale
  • 1 bag (10-12 oz) tortilla chips
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/2 red onion, diced
  • 1 jalapeño, sliced
  • 1 medium tomato, diced
  • 1/4 cup sliced black olives
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • Sour cream, for serving
  • Salsa, for serving
  • Lime wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water to the skillet. Stir and simmer for 5 minutes until the meat is well coated and the liquid is mostly absorbed.
  4. On a large sheet pan, spread out the tortilla chips in an even layer.
  5. Top the chips with the seasoned meat, black beans, corn, and both cheeses.
  6. Bake in the oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from oven and add diced tomato, red onion, jalapeño slices, black olives, avocado, and cilantro.
  8. Serve immediately with sour cream, salsa, and lime wedges on the side.

Notes

  • You can substitute ground beef with chicken or make it vegetarian by skipping the meat and adding extra beans or veggies.
  • Use a mix of cheeses for better flavor and melting consistency.
  • Nachos are best served immediately to prevent soggy chips.
