Description

A tangy and elegant vinaigrette made with minced shallots, red wine vinegar, and Dijon mustard, perfect for salads, vegetables, and more.

Ingredients

Scale
  • 2 tbsp shallots, finely minced
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp honey or maple syrup (optional)

Instructions

  1. In a small bowl or jar, combine the minced shallots and red wine vinegar. Let sit for 5-10 minutes to slightly pickle the shallots.
  2. Add Dijon mustard, salt, black pepper, and honey or maple syrup if using. Stir to combine.
  3. Slowly whisk in the olive oil until the vinaigrette is emulsified and smooth.
  4. Taste and adjust seasoning as needed.
  5. Use immediately or refrigerate in a sealed container for up to 1 week. Shake or stir before serving.

Notes

  • Use white wine vinegar or apple cider vinegar for a different flavor profile.
  • Add minced garlic for a stronger bite.
  • Fresh herbs like parsley or tarragon can add depth.
  • Try lemon juice instead of vinegar for a citrusy version.
  • Whole grain mustard can be used for a more textured vinaigrette.
