Description

This savory breakfast casserole is packed with flavorful sausage, gooey melted cheese, and fluffy eggs. It’s the perfect make-ahead dish for busy mornings, weekend brunches, or holiday breakfasts. Easy to prep, bake, and serve — it’ll keep everyone coming back for seconds.


Ingredients

  • 1 pound breakfast sausage (pork or turkey)

  • 6 large eggs

  • 2 cups milk

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 6 cups cubed day-old bread (like French or sourdough)

  • 1 1/2 cups shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 2 tablespoons chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  2. In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles. Drain excess grease.

  3. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.

  4. Add the bread cubes, cooked sausage, and both cheeses to the bowl. Stir to combine and soak the bread evenly.

  5. Pour the mixture into the prepared baking dish and spread it out evenly.

  6. Bake uncovered for 45–50 minutes, or until the center is set and the top is golden brown.

  7. Let it cool for 5–10 minutes before slicing. Garnish with chopped parsley if desired.


Notes

  • You can assemble this casserole the night before and refrigerate it. Just bake it in the morning!
