Ingredients

1 lb smoked sausage, sliced into 1/4-inch rounds

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced into half moons

1 red onion, sliced

1 cup broccoli florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add sliced sausage and cook for 5–6 minutes, until browned. Remove and set aside.

In the same skillet, add remaining tablespoon of olive oil.

Add bell peppers, zucchini, onion, and broccoli. Sauté for 6–8 minutes, until veggies are tender but still crisp.

Sprinkle with garlic powder, Italian seasoning, salt, and pepper.

Return sausage to the skillet and stir everything together. Cook for another 2–3 minutes to heat through.

Serve hot, optionally over rice, pasta, or quinoa.
