Description

A flavorful and juicy roasted chicken infused with garlic and fresh herbs, perfect for a comforting and hearty meal.


Ingredients

  • 1 whole chicken (about 4 lbs)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon, halved
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, quartered
  • 4 carrots, peeled and cut into chunks
  • 2 stalks celery, chopped


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix together the garlic, rosemary, thyme, parsley, olive oil, salt, and pepper.
  3. Pat the chicken dry with paper towels and rub the herb mixture all over the chicken, including under the skin.
  4. Place the lemon halves inside the cavity of the chicken.
  5. Arrange the onion, carrots, and celery in the bottom of a roasting pan and place the chicken on top.
  6. Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.
  7. Let the chicken rest for 10 minutes before carving and serving.

Notes

  • You can use dried herbs if fresh ones are not available; use 1 teaspoon of dried herbs per tablespoon of fresh.
  • For extra flavor, marinate the chicken with the herb mixture for a few hours before roasting.
  • Use the pan drippings to make a simple gravy or sauce.
