A flavorful and juicy roasted chicken infused with garlic and fresh herbs, perfect for a comforting and hearty meal.
Ingredients
- 1 whole chicken (about 4 lbs)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 lemon, halved
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, quartered
- 4 carrots, peeled and cut into chunks
- 2 stalks celery, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- In a small bowl, mix together the garlic, rosemary, thyme, parsley, olive oil, salt, and pepper.
- Pat the chicken dry with paper towels and rub the herb mixture all over the chicken, including under the skin.
- Place the lemon halves inside the cavity of the chicken.
- Arrange the onion, carrots, and celery in the bottom of a roasting pan and place the chicken on top.
- Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.
- Let the chicken rest for 10 minutes before carving and serving.
Notes
- You can use dried herbs if fresh ones are not available; use 1 teaspoon of dried herbs per tablespoon of fresh.
- For extra flavor, marinate the chicken with the herb mixture for a few hours before roasting.
- Use the pan drippings to make a simple gravy or sauce.
