Description

A crispy, golden roasted cauliflower dish with a tender center, seasoned simply and optionally customizable with herbs and spices.


Ingredients

  • 1 large head cauliflower, cut into uniform florets
  • 23 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika (optional)
  • 1 tbsp lemon juice (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut cauliflower into florets, keeping them uniform for even roasting.
  3. Place florets in a large bowl, drizzle with olive oil, and toss to coat evenly.
  4. Season with salt, pepper, garlic powder, and paprika if using. Toss again to distribute.
  5. Spread florets on the baking sheet in a single layer without overcrowding.
  6. Roast for 25–30 minutes, flipping halfway through, until golden brown and tender.
  7. Remove from oven and drizzle with lemon juice if desired.
  8. Garnish with chopped parsley and serve warm.

Notes

  • Add grated Parmesan in the last 5 minutes of roasting for a cheesy touch.
  • Toss with buffalo sauce after roasting for a spicy kick.
  • Sprinkle with cumin and turmeric for an Indian-inspired flavor.
  • Add red pepper flakes for heat.
  • Mix with chickpeas and tahini dressing for a complete meal.
