Description
Rhubarb Slush is a refreshing frozen drink made with tart rhubarb, citrus juice, and a hint of sweetness – perfect for cooling off on hot summer days or serving as a party punch.

- 5 cups chopped fresh rhubarb
- 4 cups water
- 1 1/2 cups granulated sugar
- 1/2 cup lemon juice (fresh or bottled)
- 1/2 cup orange juice
- 2 cups ginger ale or lemon-lime soda (for serving)
- Optional: 1 cup vodka or gin (for adult version)
Instructions
- In a large saucepan, combine rhubarb, water, and sugar. Bring to a boil, then reduce heat and simmer for 10–15 minutes until rhubarb is soft.
- Remove from heat and let cool slightly. Strain mixture through a fine sieve or cheesecloth, discarding solids.
- Stir in lemon juice and orange juice. Add alcohol if using.
- Pour mixture into a large freezer-safe container and freeze for at least 8 hours or overnight, stirring occasionally for a smoother texture.
- To serve, scrape or scoop slush into glasses and top with ginger ale or lemon-lime soda.
- Garnish with lemon slices or mint if desired and serve immediately.
Notes
- For a sweeter slush, increase sugar to 2 cups.
- Make a large batch and store frozen for up to 2 weeks.
- Perfect as a non-alcoholic drink or spiked cocktail.
