- 2 tablespoons vegetable oil or lard
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 cups cooked pinto beans (or 2 cans, drained and rinsed)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder (optional)
- Salt to taste
- 1/4 cup water or bean cooking liquid (more as needed)
Instructions
- Heat the oil or lard in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the garlic and cook for 1 minute more.
- Add the beans, cumin, chili powder (if using), and salt.
- Cook for a few minutes, then mash the beans with a potato masher or back of a spoon.
- Gradually add water or bean liquid to achieve your desired consistency.
- Continue to cook, stirring occasionally, until the beans are thick and creamy, about 10 minutes.
- Taste and adjust seasoning as needed before serving.
Notes
- Use black beans as an alternative to pinto beans.
- For extra flavor, add a splash of lime juice or sprinkle of cheese before serving.
- Can be made ahead and reheated with a bit of water to loosen the texture.
