Ingredients
-
3 ripe bananas, mashed
-
1/2 cup creamy peanut butter
-
1/3 cup melted butter
-
1/2 cup brown sugar
-
1/4 cup granulated sugar
-
1 large egg
-
1 tsp vanilla extract
-
1 tsp baking soda
-
1/4 tsp salt
-
1 1/2 cups all-purpose flour
-
1 cup chopped Reese’s Peanut Butter Cups (plus extra for topping, optional)
Instructions
-
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
-
In a large bowl, mash the bananas. Add peanut butter, melted butter, brown sugar, granulated sugar, egg, and vanilla. Mix until well combined.
-
Stir in baking soda and salt, then add the flour. Mix until just combined—don’t overmix.
-
Fold in chopped Reese’s Peanut Butter Cups.
-
Pour the batter into the prepared loaf pan. If desired, sprinkle extra chopped Reese’s on top.
-
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
-
Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
-
For extra banana flavor, use very ripe bananas with lots of brown spots.
-
You can use chunky peanut butter if you like a bit more texture.
-
Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
