- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for cheesecake layer)
- 1 large egg (for cheesecake layer)
- 1/2 teaspoon vanilla extract (for cheesecake layer)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a bowl, mix melted butter and 1 cup sugar. Add 2 eggs, 1 tsp vanilla, and red food coloring, mixing until smooth.
- Stir in cocoa powder, flour, and salt until just combined. Reserve 1/4 cup of the batter for swirling.
- Pour the remaining red velvet batter into the prepared pan and spread evenly.
- In a separate bowl, beat cream cheese, 1/4 cup sugar, 1 egg, and 1/2 tsp vanilla until smooth.
- Spoon the cheesecake mixture over the brownie batter. Drop spoonfuls of reserved red velvet batter on top and use a knife to swirl.
- Bake for 30-35 minutes or until a toothpick inserted near the center comes out mostly clean.
- Cool completely before slicing into squares and serving.
Notes
- Use gel food coloring for a more vibrant red color.
- Chilling the brownies makes them easier to cut cleanly.
- Store leftovers in the refrigerator for up to 5 days.
