- 1/4 cup sun-dried tomatoes (packed in oil), drained and patted dry
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice

Instructions
- Drain the sun-dried tomatoes and pat them dry to remove excess oil.
- In a food processor or blender, combine the roasted red peppers, sun-dried tomatoes, garlic, and lemon juice. Pulse until finely chopped.
- Add the mayonnaise and blend until the mixture is smooth and creamy.
- While blending, slowly drizzle in olive oil to emulsify and enhance the texture.
- Season with salt and black pepper to taste.
- Transfer the aioli to a bowl, cover, and refrigerate for at least 30 minutes to let the flavors meld.
