Description

A rich and creamy Mediterranean-style aioli made with roasted red peppers, sun-dried tomatoes, garlic, and lemon. Perfect as a dip, spread, or sauce to enhance any dish.


Ingredients

  • 1/2 cup roasted red peppers, drained
  • 1/4 cup sun-dried tomatoes (packed in oil), drained and patted dry
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste

Instructions

  1. Drain the sun-dried tomatoes and pat them dry to remove excess oil.
  2. In a food processor or blender, combine the roasted red peppers, sun-dried tomatoes, garlic, and lemon juice. Pulse until finely chopped.
  3. Add the mayonnaise and blend until the mixture is smooth and creamy.
  4. While blending, slowly drizzle in olive oil to emulsify and enhance the texture.
  5. Season with salt and black pepper to taste.
  6. Transfer the aioli to a bowl, cover, and refrigerate for at least 30 minutes to let the flavors meld.
