- 12 oz penne pasta
- 1 tbsp olive oil
- 1 lb chicken breast or shrimp (optional)
- 1 tbsp jerk seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup scallions, chopped
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken or shrimp, season with jerk seasoning, and cook until done. Remove and set aside.
- In the same skillet, add bell peppers and cook until slightly tender.
- Add garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in parmesan and mozzarella cheese, mixing until the sauce is smooth and creamy.
- Add the cooked pasta and stir to coat evenly in the sauce.
- Return the cooked chicken or shrimp to the skillet and mix well.
- Season with salt and pepper to taste.
- Garnish with chopped scallions and parsley before serving.
Notes
- Use vegan cheese and plant-based protein for a vegetarian or vegan version.
- Adjust jerk seasoning to control spiciness.
- Great with shrimp, tofu, or just vegetables for flexibility.
