Description

Rasta Pasta is a vibrant, creamy Caribbean-inspired pasta dish made with colorful bell peppers, jerk seasoning, and a rich cheesy sauce, often served with chicken or shrimp.


Ingredients

  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 1 lb chicken breast or shrimp (optional)
  • 1 tbsp jerk seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup scallions, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken or shrimp, season with jerk seasoning, and cook until done. Remove and set aside.
  3. In the same skillet, add bell peppers and cook until slightly tender.
  4. Add garlic and sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Stir in parmesan and mozzarella cheese, mixing until the sauce is smooth and creamy.
  7. Add the cooked pasta and stir to coat evenly in the sauce.
  8. Return the cooked chicken or shrimp to the skillet and mix well.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped scallions and parsley before serving.

Notes

  • Use vegan cheese and plant-based protein for a vegetarian or vegan version.
  • Adjust jerk seasoning to control spiciness.
  • Great with shrimp, tofu, or just vegetables for flexibility.
