Description

A buttery, crisp-on-the-outside, soft-on-the-inside Southern-style biscuit baked in a pool of melted butter, with sweet-tart raspberries throughout.


Ingredients

  • 1 tbsp baking powder

  • 1/2 cup unsalted butter, melted
  • 1 3/4 cups buttermilk
  • 1 cup fresh or frozen raspberries

Instructions

  1. Preheat oven to 450°F (230°C). Grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add buttermilk and stir until just combined. Do not overmix.
  4. Gently fold in raspberries.
  5. Pour melted butter into the prepared baking dish.
  6. Spoon dough over the melted butter, spreading evenly.
  7. Use a knife to cut the dough into 9 squares for easier serving.
  8. Bake for 25–30 minutes until golden and crisp around the edges.
  9. Let cool slightly before serving.
