Description

A quick and easy blueberry crisp made with fresh or frozen blueberries and a buttery oat topping. Perfect for a simple dessert any night of the week.


Ingredients

  • 4 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tsp cornstarch
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the blueberries, granulated sugar, lemon juice, and cornstarch. Mix well and spread evenly in a greased 8×8-inch baking dish.
  3. In another bowl, mix the oats, flour, brown sugar, cinnamon, and salt.
  4. Pour the melted butter over the oat mixture and stir until crumbly and well combined.
  5. Sprinkle the topping evenly over the blueberry mixture.
  6. Bake for 35-40 minutes, or until the topping is golden brown and the blueberries are bubbling.
  7. Let cool for at least 10 minutes before serving. Serve warm with ice cream or whipped cream if desired.

Notes

  • You can use frozen blueberries straight from the freezer—no need to thaw.
  • Add a pinch of nutmeg to the topping for extra flavor.
  • Store leftovers in the fridge for up to 3 days.
