Description

This shrimp stir fry is quick, easy, and loaded with fresh veggies and tender shrimp tossed in a savory garlic soy sauce. It’s ready in under 30 minutes and perfect for a weeknight dinner. Serve it over rice or noodles for a complete meal!

Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 2 tablespoons vegetable oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup broccoli florets

  • 1 carrot, thinly sliced

  • 2 cloves garlic, minced

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional)

  • 1 tablespoon hoisin sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon cornstarch

  • 2 tablespoons water

  • Salt and pepper, to taste

  • Green onions and sesame seeds, for garnish (optional)

Instructions

  1. In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, and water. Set aside.

  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

  3. Add shrimp and cook for 2–3 minutes per side until pink and cooked through. Remove from skillet and set aside.

  4. Add remaining oil to the skillet. Sauté garlic for 30 seconds, then add broccoli, carrots, and bell peppers. Stir fry for 4–5 minutes until vegetables are tender-crisp.

  5. Return the shrimp to the skillet. Pour the sauce over everything and stir well to coat. Cook for another 1–2 minutes until the sauce thickens.

  6. Garnish with green onions and sesame seeds if desired. Serve hot over rice or noodles.

Notes

  • You can swap out vegetables based on what you have—snap peas, zucchini, or mushrooms work great too.

  • Use low-sodium soy sauce if preferred.

  • For a spicier version, add a pinch of red pepper flakes or a dash of sriracha.
