- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup milk
- 1 1/2 cups canned pumpkin puree
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, pumpkin pie spice, and cinnamon.
- In another bowl, whisk together eggs, oil, milk, pumpkin puree, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

- You can add chocolate chips or chopped nuts for extra flavor and texture.
- Store muffins in an airtight container at room temperature for up to 3 days.
