Description

These moist and fluffy pumpkin spice muffins are packed with warm spices and pumpkin flavor, making them the perfect fall treat.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 1/2 cups canned pumpkin puree
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, pumpkin pie spice, and cinnamon.
  3. In another bowl, whisk together eggs, oil, milk, pumpkin puree, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
