- 1/2 cup granulated sugar
- 1/4 tsp salt
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup pumpkin puree
- 1 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/4 tsp ground nutmeg (plus more for garnish)
- 1/4 tsp ground cinnamon (plus more for garnish)
- 1/4 to 1/2 cup bourbon or rum (optional)
Instructions
- In a saucepan over medium heat, whisk together eggs, sugar, and salt until well blended.
- Gradually stir in the milk and continue cooking, stirring constantly, until the mixture thickens slightly and reaches 160°F (71°C).
- Remove from heat and strain through a fine mesh sieve for a smooth texture.
- Whisk in heavy cream, pumpkin puree, vanilla extract, and pumpkin pie spice.
- Let the mixture cool, then cover and refrigerate for at least 4 hours or until well chilled.
- Before serving, whisk or blend the eggnog to re-incorporate any settled spices.
- Serve chilled, garnished with ground nutmeg and cinnamon. Add bourbon or rum if desired.
