Description

Soft, cake-like pumpkin cookies spiced with warm fall flavors and topped with a sweet, tangy cream cheese frosting. Perfect for autumn treats or festive gatherings.


Ingredients

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 cup salted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups confectioners’ sugar
  • 1/2 tsp vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, cream together salted butter, brown sugar, and granulated sugar until fluffy.
  4. Add pumpkin puree, eggs, and vanilla extract to the wet mixture and blend until smooth.
  5. Gradually mix in the dry ingredients until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are firm and centers set.
  8. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
  9. To make the frosting, beat cream cheese and unsalted butter until smooth. Add vanilla extract and gradually mix in confectioners’ sugar until fluffy.
  10. Once cookies are completely cool, frost with cream cheese frosting.
