Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add pumpkin purée, egg, and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Scoop dough onto the baking sheet, spacing cookies about 2 inches apart.
  7. Bake for 12-15 minutes, until set and lightly golden on the bottom.
  8. Let cookies cool completely on a wire rack.
  9. For the frosting, beat cream cheese and butter together until smooth.
  10. Add powdered sugar, cinnamon, and vanilla extract, mixing until fluffy. Add milk if needed for spreadability.
  11. Frost each cooled cookie generously with the cinnamon cream cheese frosting.
