- 2 cups egg whites
- 1/2 cup cottage cheese
- 1/2 cup diced bell peppers
- 1/4 cup chopped spinach
- 1/4 cup diced onions
- 1/4 cup shredded cheddar cheese (optional)
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a muffin tin with cooking spray.
- In a blender, combine the egg whites and cottage cheese. Blend until smooth.
- Pour the egg mixture into a bowl and stir in the bell peppers, spinach, onions, and shredded cheese if using.
- Season with salt and pepper to taste.
- Divide the mixture evenly among the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes or until the egg whites are set and slightly golden on top.
- Allow to cool for a few minutes before removing from the muffin tin.
- Serve immediately or store in an airtight container in the refrigerator for up to 5 days.

- Customize with your favorite veggies like mushrooms or tomatoes.
- Use silicone muffin cups for easier removal.
- Freeze for up to 1 month; reheat in the microwave before eating.
