Description

A comforting and flavorful soup recipe that combines the delicious flavors of potstickers with a savory broth, veggies, and Asian-inspired seasonings. This Potsticker Soup is easy to make and perfect for a cozy night in.


Ingredients

Soup:

  • 1 tablespoon sesame oil
  • 3 green onions (sliced, white and green parts separated)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 6 cups low-sodium chicken or vegetable broth
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar

Add-Ins:

  • 1 (16-ounce) package frozen potstickers (any variety)
  • 1 cup shredded carrots
  • 1 cup baby spinach or bok choy
  • ½ teaspoon crushed red pepper flakes (optional)
  • fresh cilantro or green onion tops for garnish

Instructions

  1. Sauté Aromatics: In a large pot, heat sesame oil over medium heat. Add the white parts of the green onions, garlic, and ginger. Sauté for 1–2 minutes until fragrant.
  2. Simmer: Pour in the broth, soy sauce, and rice vinegar. Bring to a simmer.
  3. Add Potstickers: Add frozen potstickers and cook according to package directions, usually 6–8 minutes, until heated through and tender.
  4. Stir in Veggies: In the last 2 minutes of cooking, stir in shredded carrots and spinach. Simmer until the greens are wilted.
  5. Adjust Seasoning: Taste and adjust seasoning with more soy sauce or red pepper flakes if desired.
  6. Serve: Ladle soup into bowls and garnish with cilantro and the green parts of the green onions.

  • You can use pork, chicken, veggie, or shrimp potstickers.
