  • Yield: 6 popovers (popover pan) or 8 (muffin tin) 1x

Description

Light and airy popovers with a crisp exterior and soft custardy center—perfect for breakfast, brunch, or dinner.

Ingredients

Scale
  • 2 large eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 2 tablespoons unsalted butter, melted (plus extra for greasing)
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 450°F (230°C) and place a popover pan or muffin tin inside to heat.
  2. In a mixing bowl, whisk the eggs and milk together until well combined.
  3. Add the flour and salt, then mix until the batter is smooth and slightly bubbly.
  4. Remove the hot pan from the oven and quickly brush each cup with melted butter.
  5. Pour the batter into the cups, filling each about halfway.
  6. Bake at 450°F (230°C) for 15 minutes without opening the oven.
  7. Reduce the oven temperature to 350°F (175°C) and continue baking for another 15-20 minutes, until the popovers are golden and puffed.
  8. Remove from the oven and pierce each popover with a knife to release steam.
  9. Serve immediately for the best texture.

Notes

  • Add shredded cheese or herbs to the batter for a savory twist.
  • Use a mini muffin tin for bite-sized popovers.
  • Add sugar and vanilla for a sweet version.
