- 1 lb Polish sausage, sliced
- 4 cups sauerkraut, drained and rinsed
- 4 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tbsp olive oil
- 1 tsp caraway seeds (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add sliced sausage and cook until browned.
- Stir in potatoes, sauerkraut, and caraway seeds if using.
- Pour in chicken broth and bring to a simmer.
- Cover and cook on low heat for 30-35 minutes, or until potatoes are tender.
- Season with salt and pepper to taste before serving.
Notes
- For extra flavor, use smoked Polish kielbasa.
- Can be cooked in a slow cooker on low for 6-8 hours.
- Serve with crusty bread or mustard on the side.
