Description

A hearty and traditional Polish comfort dish featuring smoked sausage, tangy sauerkraut, and tender potatoes simmered together for a flavorful one-pot meal.


Ingredients

  • 1 lb Polish sausage, sliced
  • 4 cups sauerkraut, drained and rinsed
  • 4 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • 1 tsp caraway seeds (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add sliced sausage and cook until browned.
  4. Stir in potatoes, sauerkraut, and caraway seeds if using.
  5. Pour in chicken broth and bring to a simmer.
  6. Cover and cook on low heat for 30-35 minutes, or until potatoes are tender.
  7. Season with salt and pepper to taste before serving.

Notes

  • For extra flavor, use smoked Polish kielbasa.
  • Can be cooked in a slow cooker on low for 6-8 hours.
  • Serve with crusty bread or mustard on the side.
