Description

This flavorful London Broil marinade inspired by the Pioneer Woman brings bold, savory flavor to an affordable cut of beef. With a simple blend of pantry staples like soy sauce, Worcestershire, garlic, and balsamic vinegar, it tenderizes the meat while adding a rich depth of flavor. Perfect for grilling or broiling, this marinade turns budget-friendly beef into a tender, juicy dinner favorite.


Ingredients

  • 2 pounds London Broil (top round steak)

  • 1/3 cup soy sauce

  • 1/4 cup balsamic vinegar

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons olive oil

  • 1 tablespoon Dijon mustard

  • 3 cloves garlic, minced

  • 1 tablespoon brown sugar

  • 1 teaspoon black pepper

  • 1/2 teaspoon onion powder

  • Optional: fresh rosemary or thyme sprigs


Instructions

  1. In a medium bowl, whisk together soy sauce, balsamic vinegar, Worcestershire sauce, olive oil, Dijon mustard, garlic, brown sugar, black pepper, and onion powder until well combined.

  2. Place the London Broil in a large zip-top bag or shallow dish.

  3. Pour the marinade over the meat, making sure it’s fully coated. Add fresh herbs if using.

  4. Seal the bag or cover the dish and marinate in the refrigerator for at least 4 hours, preferably overnight.

  5. Remove meat from marinade and let it rest at room temperature for 20–30 minutes before cooking.

  6. Grill or broil the London Broil to desired doneness, about 4–6 minutes per side for medium-rare depending on thickness.

  7. Let the meat rest for 10 minutes before slicing thinly against the grain.


Notes

  • This marinade works great for other cuts like flank steak or skirt steak.

  • For extra tenderness, you can score the surface of the meat lightly before marinating.

  • Leftovers make excellent sandwiches or steak salads.
