Description

This Pineapple Salsa is a bright, sweet-and-savory salsa with fresh pineapple, crisp veggies, and a touch of heat from jalapeño. Perfect with chips, tacos, grilled meats, or seafood!


Ingredients

  • 2 cups fresh pineapple, diced
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely diced
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice (about 1 lime)
  • Salt and pepper, to taste

Instructions

  1. Dice the pineapple, red bell pepper, and red onion into small, even pieces.
  2. Finely chop the jalapeño and cilantro.
  3. In a medium bowl, combine all the ingredients. Add lime juice, salt, and pepper.
  4. Stir well to combine. Taste and adjust seasoning if needed.
  5. Cover and chill for at least 30 minutes to let the flavors meld.

Notes

  • Add diced mango for extra tropical flavor.
  • Mix in diced avocado for creaminess.
  • Use green onions instead of red onion if preferred.
  • Add a pinch of chili powder for more heat.
