This Pineapple Mezcal Sour is a smoky, tropical twist on the classic sour cocktail. Fresh pineapple juice adds natural sweetness and a burst of flavor, while lime juice balances it out with a zesty kick. It’s smooth, refreshing, and has just the right amount of edge thanks to the mezcal.
Ingredients

2 oz mezcal

1 oz fresh pineapple juice

3/4 oz fresh lime juice

1/2 oz simple syrup (adjust to taste)

1/2 oz egg white (optional, for a frothy top)

Pineapple wedge or lime wheel, for garnish
Instructions

Add mezcal, pineapple juice, lime juice, simple syrup, and egg white (if using) to a cocktail shaker.

Shake without ice for about 15 seconds (dry shake) to emulsify the egg white.

Add ice and shake again for another 15–20 seconds until well chilled.

Strain into a chilled coupe glass or rocks glass.

Garnish with a pineapple wedge or lime wheel.
