Description

A sweet, smoky, and savory Pineapple BBQ Chicken with Bacon dish that’s perfect for a hearty dinner or a summer cookout.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 slices of bacon
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  3. Wrap each chicken breast with 2 slices of bacon and secure with toothpicks if needed.
  4. Heat olive oil in a skillet over medium-high heat. Sear the wrapped chicken breasts until bacon is crispy, about 2-3 minutes per side.
  5. Place the seared chicken breasts in a baking dish.
  6. Top each chicken breast with pineapple chunks and brush generously with BBQ sauce.
  7. Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  8. Remove toothpicks, garnish with fresh parsley, and serve hot.

Notes

  • You can grill the chicken instead of baking for an extra smoky flavor.
  • Use a spicy BBQ sauce if you prefer a bit of heat.
  • Fresh pineapple gives a better flavor than canned.
