- 4 boneless, skinless chicken breasts
- 8 slices of bacon
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Wrap each chicken breast with 2 slices of bacon and secure with toothpicks if needed.
- Heat olive oil in a skillet over medium-high heat. Sear the wrapped chicken breasts until bacon is crispy, about 2-3 minutes per side.
- Place the seared chicken breasts in a baking dish.
- Top each chicken breast with pineapple chunks and brush generously with BBQ sauce.
- Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- Remove toothpicks, garnish with fresh parsley, and serve hot.
Notes
- You can grill the chicken instead of baking for an extra smoky flavor.
- Use a spicy BBQ sauce if you prefer a bit of heat.
- Fresh pineapple gives a better flavor than canned.
