- 10 cups cubed day-old bread (French or sourdough)
- 1/2 cup unsalted butter
- 1 large onion, diced
- 3 celery stalks, diced
- 2 cloves garlic, minced
- 2 teaspoons fresh thyme (or 1 tsp dried)
- 1 1/2 teaspoons poultry seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 1/2 to 3 cups chicken or vegetable broth
- 2 large eggs, beaten
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Spread bread cubes on a baking sheet and toast in the oven for 10–15 minutes until lightly golden. Set aside.
- In a large skillet, melt butter over medium heat. Add onion and celery; cook for 5–7 minutes until softened. Add garlic, thyme, poultry seasoning, salt, and pepper; cook for 1 more minute.
- In a large bowl, combine toasted bread cubes, sautéed vegetables, and parsley. Toss gently to combine.
- In a separate bowl, whisk together broth and eggs. Pour over the bread mixture and stir until evenly moistened, adding more broth as needed until the bread is soft but not soggy.
- Transfer to the prepared baking dish and cover with foil. Bake for 30 minutes.
- Remove foil and bake for an additional 15–20 minutes until the top is golden and slightly crisp.
- Serve warm, garnished with extra parsley if desired.
Notes
- Use a mix of white and whole wheat bread for more texture and flavor.
- Can be made a day ahead and baked just before serving.
