Description

Ingredients

  • 1/2 cup confectioners’ sugar
  • 1 cup toasted pecans, finely chopped
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the butter and confectioners’ sugar until smooth and creamy.
  3. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  6. Fold in the chopped toasted pecans evenly.
  7. Form the dough into small balls or flatten into discs.
  8. Place the cookies on the baking sheet and bake for 12-15 minutes, until the edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Dust with extra confectioners’ sugar if desired.
